
I don’t know about you but I love anything made with pumpkin! Pumpkin season is a wonderful season!
My kids are always requesting pancakes in the morning and i don’t always get the time to make it for them, so when i do i like to try and make them healthy and delicious!
Prepare to have a yummy breakfast or breakfast for supper, hey it happens here lots on those crazy days when you still want comfort food, pair that with some bacon or sausages, fresh cut fruit and scrambled farm fresh eggs and you got yourself a grade A meal in no time at all that’ll be sure to put a smile on your favourite people’s faces!
Recipe
Ingredients:
Dry;
- 1/2 cup tapioca starch
- 1/2 sorghum flour
- 1/2 white or brown rice flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp allspice
- 1/2 tsp cloves
Wet;
- 2 eggs
- 1 tsp vanilla
- 3 Tbsp maple syrup
- 2 Tbsp milk
- 1/2 cup pumpkin puree
Instructions;
- Mix all dry ingredients up together
- Add wet ingredients to the dry ingredients and mix well (I roast my pumpkin up in advance and puree it beforehand)
- Use a ladle and pour 3/4 of it into an ungreased non-stick hot pan (can grease if you want)
- Cook on low to medium heat
- Flip pancake when bubbles are present
- Put on your favourite toppings and enjoy!
