
Who doesn’t love pancakes?! In my house we eat them frequently, my little’s are ALWAYS requesting them!
You can top them with so many things, eat them on so many occasions, even just a regular day or for whatever meal you please.
I personally like batch cooking them up and freezing some away so that on the crazy busy days when you don’t have time but the kids have been demanding pancakes for the past week you can just pop one out of the freezer and still have a happy camper with a yummy pancake!
Ingredients;
Dry
- 1/2 cup tapioca starch
- 1/2 cup sorghum flour
- 1/2 cup white rice flour
- 1/2 tsp xantham gum
- 1/2 tbsp baking powder
- 1/4 tsp salt
Wet
- 1/2 tsp vanilla
- 1 cup milk
- 2 eggs
- 3 tbsp maple syrup
Instructions;
- Add all dry ingredients together
- Then add the wet ingredients to the dry and mix with a whisk
- Use a ladle and fill 3/4 full and pour into a hot pan (on low-med heat)
- Cook on first side until bubbles are present then flip, let cook a few minutes longer
- Top with preferred topping and enjoy!
NOTE: If you like slightly thinner pancakes (that you can roll up and add peanut butter inside) just add more milk!
