Creamy Gluten Free French Onion Soup

One of my favorite soups is french onion soup, it’s such a comfort food yet also a delicacy to me!

There are many ways to make this soup but with all my made from scratch and experimenting this is the one that really hits home for me!

Ingredients:

  • 4 Tbsp Butter
  • 2 Tbsp Olive Oil
  • Whole head of minced garlic
  • 4 finely sliced onions (whatever your preference)
  • Pepper to taste
  • 1 tsp salt
  • 1/2 tsp ground dry thyme
  • 1 tsp fresh/frozen thyme leaves
  • 3 Tbsp cornstarch
  • 2 cups beef broth
  • 6 cups chicken/turkey broth
  • 1 tsp gluten free Worcestershire or soy sauce
  • 1/4 cup sour cream
  • 4 cups shredded cheese of your preference (I used mozzarella)
  • Gluten free bread (whatever you have/your preference)

Directions:

  • Throw the butter and olive oil in your pot, finely slice your onions, saute your onions and garlic, until nice and caramelized, this is the longest part
  • Once onions and garlic start to get caramelized/sweated down you can add your pepper, salt, thyme, and cornstarch, stir well, then add your broth, Worcestershire or soy sauce, mix well, simmer for 5 -10 mins, make sure its well incorporated
  • Add your sour cream, mix in well
  • Start ladling into your oven safe ramekins, place your gluten free bread (i use the end pieces or the chunks that get broken so no wastage but nobody wants to eat them so they always go back in the freezer), then top with your shredded cheese and a bit more thyme leaves
  • Broil in oven until cheese is perfectly done (my oven takes between 5-10 mins)

Tip; Use your own homemade broths it really adds that extra health benefits and flavor!
